A Roman aqueduct stands in the middle of the city. Built around the first century, it carries 167 arches of granite blocks laid without mortar across the Plaza del Azoguejo and supplied Segovia with water until 1973. Nothing separates it from everyday life: buses pass beneath it, bar tables lean against its piers, and a staircase beside it climbs to a viewpoint level with the upper tier.
The old town runs from the aqueduct to the Alcázar. Along Calle Real, past the Casa de los Picos with its facade of stone diamond points, the road leads to the cathedral, begun in 1525 and the last great Gothic church in Spain - the locals call it the Lady of Cathedrals. The ridge ends at the Alcázar: the castle stands at the confluence of two rivers, shaped like the prow of a ship, and you can climb its tower for the view back along the whole spine of the city.
Castilians come here to eat, too. The main dish is cochinillo asado, roast suckling pig; by tradition it is carved with the edge of a plate to show how tender it is, and the restaurants under the aqueduct have been doing it for generations. Outside the walls, eleven kilometres away, the palace gardens of La Granja de San Ildefonso switch on their Baroque fountains on set days in summer. At a thousand metres winter here is real - from November to March you need warm clothes.
